Chicken Tortilla Soup

(Gluten Free- Don't let the Gluten Free scare you away, you probably wouldn't know if I didn't tell you)


This recipe is super easy to make in the crockpot before you head off to work, errands after dropping the kids off at school, or simply want an easy meal.

Place all the following items into the crockpot on high heat for 5 hours;


3-4 Chicken Breast (uncooked)

2 cans of Corn

2 cans of Black Bean

2 cans of Rotel

1 - 16 oz jar of Salsa (We prefer a chunky salsa)

4 cups of Gluten Free Chicken Broth


Place the chicken in first and then all the other ingredients on top.  After it cooks on high for 5 hours I use a fork to shred the chicken.  We serve with shredded cheese and crumbled tortilla chips.
